Purslane: Recipes
The
versatility of purslane shines through with this collection of simple and
delicious recipes which only take a few minutes to prepare.
Simple
Cucumber & Purslane Salad
• 3 cucumbers, sliced
• 1 cup Purslane leaves, diced
• ½ cup unflavored yogurt
• ½ tablespoon olive oil
• 1 teaspoon red wine vinegar
• 1 tablespoon chopped mint leaves
• ¼ teaspoon black pepper
1) Mix the cucumbers and purslane in a bowl
2) Blend the other ingredients into a fine consistency
3) Pour the mixture atop the cucumbers and purslane
Ham & Purslane Sandwich
• 2 slices of Sourdough, Pumpernickel, or Rye bread
• 3 slices of Boar's Head ham
• 8 purslane stems with leaves intact
• 1 slice tomato
• 1 tablespoon yellow mustard
1) Slather the mustard on a slice of bread
2) Layer a slice of ham, the tomato, and 4 purslane stems on top of the
bread
3) Layer another slice of ham and the remaining purslane

Sri Lankan Spicy Purslane (Side Dish)
5 oz purslane stems with
leaves
6 oz cured tuna
4 tbsp water
2 tbsp olive oil
1 small leek
1 tsp lemon juice
1 crushed garlic clove
1/2 tsp salt
1/2 tsp chili powder
1) Chop the leek into small cubes
2) Simmer the oil in a pan and fry the garlic and leek for 2 minutes
3) Chop the purslane into 1" pieces
4) Fry the purslane together with the garlic and leek
5) Add the cured tuna and chili powder to the pan
6) Add the water to the pan and turn off the heat
7) Cover the pan and allow ingredients to steam for a few minutes
8) Add salt and lemon juice
9) Serve as a side dish with rice or noodles
